1 pound of ground chicken
1 can of RoTel
2 small cans of Tomato sauce (8 ounce)
2 TBSP minced garlic
1 1/2 tsp salt
1 tsp pepper
2-3 mushrooms chopped
1 TBSP Minced Onions
3 large bell peppers
Mix all ingredients together ground chicken, Rotel, 1 can tomato sauce, minced garlic, salt, pepper, mushrooms, and onions together in a large bowl.
Set Aside. Slice Bell Peppers in half and clean out the seeds. Stuff the chicken mixture into the bell pepper halves. Place the bell pepper halves in a covered baking dish. Place cover over baking dish. Put in oven and Bake for 45 minutes at 375 F. Remove from oven and top each pepper with the remaining can of tomato sauce. Put back into oven (don’t cover this time) for about 10-15 minutes until done.
