Overnight Pumpkin Pie Oats

Serves 1
An overnight oatmeal recipe loaded with tons of
1/4 cup rolled oats
1/4 cup skim milk
1/4 cup pumpkin puree
1/4 cup fat free plain greek yogurt
1/4 tsp cinnamon
1/4 tsp pumpkin pie spice
1/2 tsp vanilla
2 tsp pure maple syrup (divided)
2 graham cracker squares, crumbled
Place oats into the bottom of a mason jar (or a small container that has a lid)
Pour milk over oats, do not stir
Spoon pumpkin over oats & milk
In a small bowl combine yogurt, cinnamon, pumpkin pie spice, vanilla & 1 tsp maple syrup
Pour yogurt mixture over pumpkin
Cover and refrigerate over night (or at least 3 hours)
When ready to eat top with remaining 1 tsp maple syrup and some crumbled graham crackers
Stir & ENJOY!
