A yummy twist on just plain veggies. Great for your holiday dinners.

2 16oz bags of frozen veggies (of choice)
3/4 container of low fat sour cream (8 oz container) *I use plain greek yogurt
1/2 bag of Parmesan Cheese (used half of an 8 oz bag)
1/2 bags of Swiss Cheese (used half of an 8 oz bag)
Salt and pepper to taste

Mix sour cream(yogurt), salt and pepper, and cheese.
Place veggies in pan of boiling waters for about 5-7 minutes (soften a bit)
Oiled 9/13 baking dish with EVOO (extra virgin olive oil)
After veggies were cooked; drain, then layer bottom of baking dish with veggies
Layer the sour cream mixture over veggies
Gently mix mixture with veggies (ad more if you like)
Then I topped with Extra Swiss Cheese
Baked for about 25 minutes at 350. Server hot or warm.
