1 lb butter
1-1/2 cup icing sugar
1/2 tsp almond extract
1 tsp vanilla
1 tsp salt
4-1/2 cup flour
Cream butter until light and fluffy
Add extracts and icing sugar and combine well
Add flour and salt, if you have a mixer with a dough hook use it to form dough if not use the mixer to bring it together and then knead for 5 minutes
Roll out and cut into shapes.
Bake on parchment lined cookie sheet at 325F for 12-15minutes, just until golden brown.
3 Tbsp Meringue Powder
4 cups icing sugar
*6 Tbsp warm water
* start with 4 Tbsp water and add more as needed, 1 Tbsp at a time.
Mix all together and whip until resembles meringue for the top of lemon pie.
