Low Fat Mexican Enchiladas

12 Corn tortillas
1 lb ground turkey breast or chicken, cooked
4 cups roasted favorite vegetables
1 cup low fat cottage cheese
1 cup low fat cheddar cheese
1 can green enchilada sauce
1 can red enchilada sauce
1 cup tomatillo salsa

Preheat oven to 350 degrees. in a bowl, mix together turkey or chicken, cottage cheese, and tomatillo salsa. pour 1/2 of the green enchilada sauce on the bottom of a 13×9 backing dish. pour the red enchilada in a shallow bowl, and dredge tortillas in it. Roll turkey or chicken mixture into each tortilla and place in baking dish. pour remaining green enchilada sauce over all enchilada. Top with roasted vegetables, top with cheddar cheese, and bake for 30 minutes.
