This soup comes together super quick making it perfect for a busy weeknight dinner that the whole family is sure to love!

3 cups broccoli, chopped
1 tbsp extra virgin olive oil
1 tsp salt
1 tsp pepper
2 tbsp butter
1/2 cup onion, chopped
3 garlic cloves, minced
2 cups chicken stock
1 cup heavy whipping cream
1 tsp salt
1 tsp pepper
1 tsp chili powder
1/2 cup sharp cheddar cheese
1/2 cup mild cheddar cheese
1/4 cup shredded parmesan cheese
Optional Toppings
Additional shredded cheese
Crumbled bacon
Sour Cream

Preheat oven to 400
Line a rimmed baking sheet with foil
Lay broccoli into single layer onto prepared pan
Drizzle broccoli with olive oil and toss to coat
Sprinkle salt & pepper over broccoli and toss again to coat
Roast in the oven for 15-20 minutes or until browned, tossing once
While broccoli is roasting melt butter in a large stock pot over medium heat
Stir in onion and cook until softened, about 5 minutes, stirring often
Stir in garlic and cook for an additional 2 minutes, stirring constantly
Stir in chicken stock and bring to a boil, then simmer for 10 minutes
Stir in heavy cream, salt & pepper and continue cooking for an additional 5 minutes, letting it come up to a boil
Add in cheeses and stir until melted
Stir in roasted broccoli
Taste and adjust seasoning as needed
Serve immediately with any of the additional toppings you desire
