chicken parmesan zucchini boats

4 zucchini
1 tsp extra virgin olive oil
1 onion, chopped
1 bell pepper, chopped
2 garlic cloves, minced
1 lb ground chicken
1 tsp salt
1 tsp pepper
1 tsp dried basil
1 cup low sugar spaghetti sauce
1/2 cup grated parmesan cheese, divided
1/2 cup shredded mozzarella cheese

Preheat oven to 350
Line a rimmed baking sheet with parchment paper
Cut each zucchini in half lengthwise
Using a spoon scoop out the flesh of the zucchini, making sure to leave enough for it to keep it’s shape, place onto prepared pan
In a large skillet heat olive oil over medium heat
Add in onion & bell pepper, cooking until it starts to soften
Stir in garlic and continue cooking for an additional 1-2 minutes, stirring often to keep garlic from burning
Add in ground chicken, salt, pepper & dried basil, breaking-up the chicken as it cooks
Once chicken is browned stir in the spaghetti sauce & 1/4 cup parmesan cheese and cook for an additional 4-5 minutes or until heated through
Evenly spoon chicken mixture into the zucchini boats and top with remaining parmesan cheese and mozzarella cheese
Place into oven and cook for 20 minutes, or until cheese is browned and zucchini is tender
